1. Vegetarian Dal

1 cup brown lentils, rinsed
1 cup red lentils, rinsed
2 tablespoons of sunflower oil
1/2 teaspoon cumin seeds
1 cup of chopped yellow onion
2 cups vegetables (carrots, sweet potatoes, spinach)
2 tablespoons tomato paste
2 garlic cloves, minced
1 tablespoon grated ginger
1/2 teaspoon ground turmeric
1/2 teaspoon of cayenne
1 1/2 teaspoons garam masala
3/4 teaspoon kosher salt
Juice of half a lemon
4 cups of water
kosher salt to taste
Chopped coriander leaves to decorate

1. Heat oil over medium-high heat, add cumin seeds until they sizzle in the oil. Add the onions, garlic, ginger and sauté for three to five minutes.

2. Add the tomato paste and cook for another two minutes, then add the spices, red lentils, carrots, sweet potatoes and water. Season with salt. Cover the lid and cook over low heat for about 30 to 45 minutes.

3. Remove from heat and add lemon juice, spinach, and cilantro.

2. One Pan Pesto Zoodles

This veggie-loaded zoodle dish gives you a protein boost thanks to the pine nuts. And the pesto flavor? die for

1 cup of pine nuts
3 courgettes
1 tablespoon olive oil
1/2 cup onion, finely chopped
1 small jalapeño, minced
1 tablespoon chopped capers
1/2 teaspoon paprika
1/4 cup finely chopped cilantro
Zest of 1 lemon
4 medium/large garlic cloves
1/2 cup chopped basil leaves
1 carrot, peeled
Squeezed lemon juice
Pinch of salt

1. Toast the pine nuts.

2. Heat skillet over medium heat and add olive oil and onion. Wait for the onion to turn transparent.

3. Add the chopped capers, cilantro, lemon zest, and garlic.

4. After about three minutes, add another half tablespoon of oil.

5. Add zoodles and mix very well with the sauce.

6. Add the basil. Once the basil wilts a bit, add the peeled carrot.

7. Return to medium heat. Squeeze lemon juice and add a pinch of salt.

8. Cook until carrot is fully cooked.

9. Plate the noodles and serve topped with pine nuts, salt, freshly ground pepper, a squeeze of lemon juice, and a drizzle of olive oil.

3. One-Pot Vegan Shepherd’s Pie

2 cups of brown lentils
2 tablespoons of oil
1 chopped onion
3 carrots, in small cubes
1 sweet potato, diced
1 cup cauliflower
1 cup of mushrooms
3 garlic cloves, minced
1 tablespoon fresh thyme leaves
paprika, cumin powder, garlic powder
2 tablespoons tomato paste
3 cups of vegetable broth
1 cup frozen peas, thawed
2 tablespoons chopped parsley
Freshly ground black pepper, ground as needed
kosher salt to taste

For the mashed potatoes:
4 large russet potatoes
1/2 cup alternative milk
4 tablespoons vegan butter
1 cup vegan Parmesan cheese, optional

1. Heat pot over medium heat and add oil to mushrooms, onions, carrots, cauliflower, and sweet potatoes until tender, about 10 minutes. Season with salt, add the crushed garlic and cook for another three minutes.

2. Add thyme sprigs and tomato paste spices and cook until oil begins to separate. Add vegetable broth.

3. Mix in the lentils and cook for 30 minutes until the liquid evaporates.

4. Add the peas and cook for five minutes. Remove from heat and add the parsley. Season as needed.

5. Put the peeled and cut potatoes in cold water in a saucepan along with salt. Bring to a simmer and cook until the potatoes are well cooked. Drain.

6. While the potatoes are hot, vegan milk, butter and cheese. Season well with salt.

7. Place potatoes over meat mixture and score top with fork to allow potatoes to crisp up.

8. Bake for 30 minutes at 375°F until golden brown.
