meAre you in the mood to channel your inner Mia Thermopolis and feel like true royalty? Same. Although we may not all be blessed with a royal bloodline and a guaranteed seat on the British (or Genovian) throne, we can certainly replicate these high vibes in our everyday lives. “Think like a queen. A queen is not afraid of failure. Failure is another springboard to greatness,” as Oprah Winfrey would say.

Good news: In addition to dressing up as Duchess Kate Middleton, you can also whip up her all-time favorite summer salad recipe, which is packed with tons of anti-inflammatory and gut-healthy ingredients.

According to a recent interview, an inside source close to Middleton revealed that she loves eating a hydrating watermelon salad, which is perfect for beating the heat on a scorching hot day. “Watermelon salads are a staple of Kate’s lunches and include juicy pink watermelon tossed with avocado, onion, cucumber and feta – the perfect combination of sweet and savory,” they said. This fruit salad combo is *definitely* good enough to make you feel that watermelon sugar high.

Why We Love Kate Middleton’s Watermelon Salad Recipe So Much

For starters, the eight ingredients in the dish pack a host of health benefits, making this watermelon salad both flavorful and very good for you. In this video from @kalejunkie, Nicole Keshishian Modic shares her easy recipe for Kate Middleton’s favorite salad.

The recipe features a mix of fruits and herbs, such as chopped watermelon, cucumber, avocado, and mint. Then, it’s tossed into a vinaigrette with apple cider vinegar, vitamin-packed lime juice, heart-healthy olive oil, plus salt and pepper. Finally, the salad is completed with crumbled feta cheese rich in calcium and protein. (By the way, although this recipe includes dairy, you can also easily omit the cheese or replace it with your favorite vegan alternative.)

This dish is very hydrating, which makes it perfect for a heat wave.

Watermelon, which literally has the word “water” in its name, is made up of more than 90 percent water, making it a perfect solution for staying hydrated during the hot summer months. It’s also packed with plenty of antioxidants like lycopene, which is linked to improving blood pressure and cardiovascular health, lowering cholesterol, and lowering the risk of chronic disease, says Laura Iu, RDN, CDN, CNSC, RYT, Registered Dietitian and founder of Laura Iu Nutrition, she told Well+Good. Also, the fruit is packed with lots of vitamin C which helps boost the immune system and promote collagen production.

Of course, the rest of the fruits in this recipe also contain nutritional properties, including cucumber, one of the most hydrating foods of all time. (It’s actually more hydrating than watermelon: Cucumber is almost 96% water.) Cucumber is also packed with other nutrients and minerals, including vitamin C, potassium, magnesium, vitamin K, B vitamins, manganese, and copper.

Finally, we cannot go on without giving the avocado an honorable mention. This delicious fruit is packed with healthy fats as well as lots of fiber and antioxidants.
